Of slow mornings & patient ferments
A starter kept alive since 1982.
Golden Crumb began with a single sourdough starter, a flour-dusted counter, and the belief that bread worth eating cannot be hurried. Four decades later, that same starter still feeds every loaf we shape — the crumb is our signature, and it has never been rushed.
We bake in small batches, by hand, in the hours before the city wakes. No shortcuts, no mixes, no mass production — just flour, water, salt, time, and the patience to let the dough tell us when it is ready.
We never rush the rise. The starter decides when it is ready.
